So I have noticed that my skill level has increased to usually around middle of the pack and I have been there for quite some time. The only way I can lead the scores is if I go medic, and I can only play medic for so long before I get bored...
So I guess my question is...how would I go about improving my skill with Demoman/Soldier? Watching youtube? channeling tiger's spirit?

Watching other people play is good for starters
Another is to master their jumping technique
There are a few maps (including the training one I posted) that could help practice with you shooting people in mid-air

Yeah....Try the walkway map or ammomod for target practice. (Ultimate Training Map - Exodus Society)
Play against people that give you a challenge...and learn from your mistakes. Maybe even go spec some the higher scoring players and watch their style, if the fps is decent enough maybe you can learn something.
I play mostly soldier so ask if you have anymore questions.

What I've learned is that I play better on certain maps using certain classes, I'd just recommend finding what your best at. Like for example on badwater while defending I usually play the soldier and oddly always do better there than any other class I play. Most payload maps I play sniper because people usually line up around the cart and its easy to predict them.
Also when do you usually play? I've noticed that in the afternoon (my time) that most of the better players play, so I usually do worse than I normally do. If I play late at night I usually do alot better.
The problem with training maps I've found is there is no lag, I can shoot a someone with a rocket and finish them in mid air with the shotgun. If I ever tried that in game I'd probably get owned. And I only get like 20 ping most of the time lol But it seems to make a diference.

Start out by shooting rockets at their feet and they should pop up into the air...for you to either attempt an airshot or switch to shotgun.
You have to expect anything to happen so you will be ready for it. The better your aim gets, the more consistently you can juggle people with rockets, making easy targets. This is easy to do in pubs, plenty of targets and a wide range of skill.
It'll come with time and practice, but eventually you'll know how to react within a split second of any situation (like shooting feet, they pop up in air for a second, hit "q" and shoot them with shotgun)...unless you're just dead screwed like out of ammo lol.
Edit: Oh...and to be really good...you have to take the game as seriously as life!

I tend to lose people if I pop them in the air..Would spending some time on walkway help that?

I mean, I can get 100 points as heavy while my team is down in the 50s. It is really a matter of playing what you enjoy, and not wanting to be the best. Eventually you will get there.

Walkway is immensely useful. I've learned how to airshot from practice there. I'd love to join that training session sometime. It'd be great to learn more on solly.
Also, if you're getting sick of the class, stop playing it. Take a break. If you keep on going, you'll learn nothing and you may even decline in skill. Creating a mental connection with your class is partial to the skill factor. If feel like you're having fun playing as the class, I'm sure you'll do better, even if just infinitesimally better. So, the opposite applies as well. If you're doing bad and you're not liking how you're doing and it's just plain making you unhappy, you'll create a sort of negative affinity towards the class and may cause you to flatline or decrease in skill in said class. The mind is a powerful thing in many regards. Also, as an example, I know I can snipe extremely well if I feel like I'm doing well, but when I'm just being flanked, outsniped or whatnot, I know I won't shoot well unless I get lucky. So, all I'm saying is that...don't overdo it.

a little update...
today I went 46:4 in one map and I think it is all due to the couple of hours that I spent in walkway really learning where to aim rockets correctly...although it could've been tiger healing me (medic~!) or a few kritzkreigs as well. /brag
there is a map called rocket pratice or something
its a room filled with jumping bots and helps you learn to do air shots
